Spacing between handles (at middle finger level): 105 mm.
Measure the space between the base of your thumb and the knuckle of your last finger joint.
If this measurement is less than or equal to 105mm, opt for the smaller 180mm versions.
Hardened KA70 high carbon steel, extremely strong, considerably spacing the sharpenings.
Hardness index (Rockwell) : HRC 60 (European blades are often between 48 and 52)
The blades are polished for a perfect cut, to limit the adhesion of sap or resin and to facilitate their cleaning.
